Summer is finally here, what better way to celebrate than with a lobster bake and what better dish to serve then fresh Maine Lobster.  Over the past few years it seems that China has mirrored our taste for Maine Lobster as export demand grew last year by 7.4% to 55,500 tons at a value of over $126 million.  In fact, total exports from Maine contributed around $1 billion to the state’s economy.
